Today I am going to share with you the perfect curry recipe for breakfast and dinner.In India curry is the side dish along with chapathi,paratha,rice,naan etc.when the curry is poured then roti and naan becomes soft .So curry is an important part of Indian meal.

Egg Curry is a spicy, mouth watering curry that can be prepared very quickly.
Also eggs are very healthy.Eggs are rich in protein and as well as eggs contain essential vitamins and minerals.Eggs curry is so delicious.Egg curry can be prepared in many ways.Here boiled eggs combined with curry.It was very yummy. Here I will show you how to prepare it easily and tasty.
Egg curry is one of the popular side dish in Northern India as well as Southern India . This curry made with boiled eggs.later boiled eggs pan fried by adding oil,chilli powder and turmeric powder.Then eggs become more tasty.This curry is very suitable to make during busy time.it is very spicy and easy to make.it is goes well with chapati,roti,dosa,and naan.if you loved eggs,must try this tasty recipe.you can serve with 30 minutes.
In this recipe i grinded the onion tomato masala in a mixi jar to get thick gravy.You can use coconut milk instead of it.But i love without adding coconut milk.If you prepare in large amount you can use coconut milk.
Ingredients:
For marination of eggs
Boiled eggs -3
Chillipowder -1/4 tsp
Turmeric powder -1/4 tsp
For gravy
Mustard seeds -1 tsp
Cloves -2
Cardomom -2
Cinnamon -2
Onion -2 medium
Tomato -1 medium
Green chilli -1
Gingergarlic paste -2 tsp
Curryleaves
Chillipowder -1 tsp
Turmeric powder -1/4 tsp
Kashmiri chillipowder -1 tsp
Corriander powder -1 tsp
Garam masala -1/2 tsp
Salt as required
Corriander leaves
Oil
Water -2 cups
Preparation:
1. Boil eggs in water.remove the shell
and by using knife make slit around the eggs carefully.
2. In a nonstick pan add 2tbsp oil then
add chilli powder ,turmericpowder,then
add boiled eggs and fry on low
flame.Don't fry on high flame the spice
powders will burn.
then fried eggs keep aside.
3. In another pan or same pan add
chopped onion,
chopped greenchilli, ginger garlic paste
curryleaves,saute well till change in
color.later add salt,turmeric powder,
chillipowder,kashmirichillipowder,
corriander powder,garam masala.
mix all for 2 minutes.
4. Then add tomatoes (you can add
tomato ketchup also) then saute well.
then flame off.and keep aside and allow
to cool.
5. then grind 3/4 th portion of oninon
tomato masala in a mixi jar.
6. On the flame,add onion tomato paste to the masala we had kept aside earlier
then add 2 cups water and bring to boil.
7. when it boil add boiled eggs and
chopped corriander leaves and simmer
for 3 minutes.
Its ready,serve this tasty egg curry with chappathi,roti,idiyappam,rice ,naan.
